Banana and Nutella Stuffed French Toast

Before any presents were opened on Christmas morning, my sister and I made a delicious breakfast for the family to enjoy. We gathered around the table to feast on banana and nutella stuffed French toast, strawberry smoothies, fruit, and tea. This French toast variation gained some creaminess from the nutella and sweetness from the sliced banana. The flavors melded together beautifully.


Banana and Nutella Stuffed French Toast

Makes enough for around 6 people


  • 1 loaf sliced crusty whole wheat bread
  • 2 cups almond milk
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tsp vanilla extract
  • 4 sliced bananas
  • Homemade nutella (see recipe below)
  • Maple syrup for drizzling on finished toast (optional)


  • Combine the milk, cinnamon, nutmeg, and vanilla extract in a bowl. Heat a pan or griddle over medium heat. Spray it with cooking spray or use some vegan butter (such as Earth Balance) to grease the surface.
  • Dip the bread slices in the batter, let the excess drip off, and place on the hot griddle. After a few minutes and the bread slices are golden brown, flip the bread over to cook the other side.
  • Once the slices are cooked, spread one side of each slice with homemade nutella. Place a layer of sliced bananas on the nutella and top with another slice of bread to complete the sandwich.
  • You can drizzle maple syrup on the toast  if you want. I did not, the bananas make it sweet and the nutella creamy.

Homemade Nutella


  • 1 cup hazelnuts
  • 1/2 cup almond milk
  • 3 squares 100% cocoa
  • 2 tsp vanilla extract
  • 3 tbl maple syrup
  • 3 tbl unsweetened cocoa powder


  • Grind the hazelnuts in a food processor until it’s the consistency of nut butter. Add the remaining ingredients and process until smooth.


French Toast for Blog

Our breakfast was complete with strawberry banana soy milk smoothies, juicy clementines, and pimping hot peppermint tea, all on my great grandmother’s fine china. IMG_3931
