In honor of my mother (who just had a birthday this past weekend!), I’ve recreated a treat she used to love getting at Disney World. My parents took me there several times as a child, and I have vivid memories of eating Dole Whip. If you’re unfamiliar with this dessert, it’s pretty much vanilla and pineapple ice cream swirled together in a soft-serve form. It’s heavenly.
I use frozen bananas at least once a day to make some kind of creamy smoothie (my go to is a peanut butter and chocolate one), but I thought why not use the creamy frozen banana texture to make a pineapple “ice cream”. I completely and utterly winged in, but was so happy when I tasted it! It’s super simple, quick, and healthy, but best of all it ACTUALLY TASTES LIKE DOLE WHIP!
- 1 and 1/2 cup ice
- 1 frozen banana
- 1/2 tsp vanilla extract
- 1/3 cup pineapple juice
- 1/3 cup soy milk (I used unsweetened original)
- Add all ingredients to a good blender (to sufficiently crush the ice), blend until smooth, and be amazed at how delicious this is!
