Happy New Year blog friends! How are you going to make this year a happy and healthy one? Any big plans on the horizon?
My year ended with a bang, traveling from New Orleans to Califoria to New Jersey/New York. Holiday time was spent catching up with friends, with family, and eating LOTS of good food.
Like I do every year, I wrote out a list of resolutions. I’m a strong believer in self-reflection and self-improvement. My resolutions are always realistic goals I set for myself to work towards continuously throughout the year. At the moment they’re posted on a “sticky note” on my desktop. This way I see them everyday. 🙂
One of my unoffical resolutions is to try more recipes and share them with you. So here it goes! First up is some healthy chocolate pudding!
Being the chocoholic I am, I have always had a love of chocolate pudding. This recipe is a healthy spin on the usual sugary, saturated fat filled dessert. The avocados add heart healthy monounsaturated fat, fiber, and vitamins to the treat. Due to the high (healthy) fat content, avocados are high in calories, so watch your portion size. The cocoa powder adds antioxidants, and of course chocolate flavor!
Chocolate Avocado Pudding
- 2 ripe avocados
- 1 ripe banana
- 1/3 cup unsweetened cocoa powder
- 1/3 cup dates, pitted, soaked in water for a few hours, drained
- 1 tsp pure vanilla extract
Combine all ingredients in a food processor and blend until smooth. As you blend the ingredients you may need to stop the processor a few times to scrap the mixture off the sides. Soaking the dates ahead of time helps them blend more easily.
Once the pudding is blended, divide it up into 6 bowls. Chill the bowls in the refrigerator for a few hours. This recipe serves about 6 people and is great topped with sliced bananas, strawberries, or other berries.
