Thai night: Peanut Ginger Lime Sauce over Colorful Spring Rolls

Still in the process of recovering from my weekend of gardening (lots of dirt moving), some Thai-inspired cuisine seemed to soothe my achy muscles. This peanut sauce was quick to throw together and refreshing on the palate. I assembled some spring rolls filled with colorful veggies (including carrots, green bell peppers, and red lettuce). Purple cabbage, avocado, tofu, and tempeh would also be great additions.

Peanut Ginger Lime Dipping Sauce

Ingredients: 

  • 2 cloves garlic
  • 2 tbl roasted unsalted peanuts
  • 1 tbl coconut sugar
  • 1 inch fresh ginger root
  • 2 small limes, juiced
  • 1 tbl soy sauce

Directions: 

  • Blend all ingredients until smooth in a high-power blender. If you don’t have a strong blender, you could minced the garlic and ginger finely, chopped the peanuts, and mix the remaining ingredients together in a bowl. The end result will be different, but still tasty I’m sure!
  • Use as a dipping sauce for spring rolls or as dressing on a salad. Keeping with the Thai theme, this dressing would be delicious on green papaya salad.
