Raw Chocolate Fudge


Just in time for the holidays…some chocolate fudge. This rich dessert is delicious, and is healthier then regular fudge.

Raw Chocolate Fudge



  • 2 cups cashews
  • 2 cups unsweetened shredded coconut
  • 1 cup pitted dates
  • 3/4 cup cocoa powder
  • 1/2 cup maple syrup


  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/3 cup cocoa powder
  • pinch sea salt
  • cacao nibs for topping

What to do:

  • Blend the cashews and coconut in a food processor until it becomes a fine powder.
  • Add the dates and cocoa powder, and mix until it forms a sticky paste.
  • Add the maple syrup and salt, and blend once more.
  • Spread the mixture out on a rimmed pan lined with foil or parchment paper. Place in the refrigerator for at least 30 minutes, allowing the mixture to harden.
  • Now make the ganache by adding the maple syrup and melted coconut oil to the food processor. Add in the cocoa powder and salt.
  • Once combined, pour the ganache over the fudge and sprinkle on the cacao nibs. Place the fudge back in the refrigerator to harden for at least another hour. Cut into squares and enjoy!
