Hearty & Satisfying White Bean & Kale Soup

Looking for a warm hearty soup? Well you’ve come to the right place. Once you’ve got your white beans and quinoa cooked, the recipe comes together very quickly. If pressed for time, you can use canned beans. I cooked up a big batch of beans, so I could have extra for making hummus. 🙂

White Bean & Kale Soup

Ingredients:

  • 1 tbl avocado oil
  • 2 medium carrots, chopped
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 4 cups vegetable stock
  • 2 bay leaves
  • 1 cup water
  • 2 cups cooked quinoa
  • 3 cups kale, chopped
  • 2 cups cooked white beans
  • Juice of 1 lime
  • 2 tbl fresh parsley, chopped
  • Black pepper, to taste
  • 1/4 cup nutritional yeast

 

What to do: 

  1. Heat avocado oil over medium heat in a soup pot. Add the carrots and cook for about 5 minutes.
  2. Add the thyme, basil, and oregano. Cook for a minute until herbs are fragrant.
  3. Pour in the vegetable stock, bay leaves, and 1 cup of water. Bring the pot to a boil.
  4. Once boiling reduce the heat to a simmer and add the quinoa, kale, and white beans.
  5. Allow the soup to heat through and the kale to cook, for about 3 minutes.
  6. Stir in the lime juice, parsley, pepper (to taste), and nutritional yeast.
  7. Pour into serving bowls and enjoy!
